Truffle Chocolate Mousse

Ingredients (Serves 4)

  • 200g dark chocolate (70% cocoa), chopped
  • 3 large eggs, separated
  • ¼ cup granulated sugar
  • 1 cup heavy cream
  • 1 tsp truffle oil (optional, for subtle earthy flavor)
  • Whipped cream and chocolate shavings for garnish

Instructions

  1. Melt chocolate: Place chopped chocolate in a heatproof bowl over simmering water. Stir until smooth. Remove from heat and let cool slightly.
  2. Whip egg whites: Beat egg whites with a pinch of salt until soft peaks form. Gradually add sugar and beat until stiff peaks form.
  3. Whip cream: In a separate bowl, whip heavy cream until soft peaks form.
  4. Combine: Fold egg yolks into melted chocolate. Gently fold in whipped cream, then carefully fold in egg whites to keep mousse airy.
  5. Add truffle flavor: Stir in truffle oil if using, for a subtle earthy aroma.
  6. Chill: Spoon mousse into serving cups and refrigerate for at least 2 hours.
  7. Serve: Garnish with whipped cream and chocolate shavings before serving.
