Dark Chocolate Truffle Tart

Ingredients (Serves 6–8)

For the crust:

  • 200g digestive biscuits (or graham crackers), crushed
  • 100g unsalted butter, melted

For the filling:

  • 200g dark chocolate (70% cocoa), chopped
  • 200ml heavy cream
  • 2 tbsp unsalted butter
  • 1 tsp vanilla extract
  • Pinch of salt

For garnish (optional):

  • Cocoa powder or shaved chocolate
  • Fresh berries

Instructions

  1. Prepare crust:
    • Mix crushed biscuits with melted butter until evenly combined.
    • Press the mixture firmly into a 9-inch tart pan.
    • Chill in the refrigerator for 15–20 minutes to set.
  2. Prepare chocolate filling:
    • In a small saucepan, heat heavy cream over medium heat until it begins to simmer.
    • Remove from heat and pour over chopped dark chocolate in a heatproof bowl.
    • Let sit 1–2 minutes, then stir until smooth and glossy.
    • Stir in butter, vanilla, and a pinch of salt.
  3. Assemble tart:
    • Pour chocolate filling over the chilled crust and spread evenly.
    • Refrigerate for at least 2 hours or until fully set.
  4. Serve:
    • Dust with cocoa powder or decorate with shaved chocolate and fresh berries before serving.
